Sunday times…a moment for me

Sunday. I love sunday because I can do all the things I can not do during the week, such as reading, watching a good movie, listening music, or cooking. In my family, all know how to cook, for Christmas, New Year’s Day, Easter or various celebrations, most of the time is spent in the kitchen preparing delicious treats (and count how many extra pounds you take).
So, every Sunday, I cook something, I am inspired by the moment and this is one of the last Sunday dinners I have prepared. I hope you’ll like it!
Pasta carbonara or just Carbonare
What you need:

250 gr. bacon
2 eggs
Parmigiano q.b
200 grams of pasta
a quarter of a white onion

– Cut the onion as finely as possible, pour it in a pan with a little olive oil, leave it to brown

In the meantime, break two eggs in a bowl and combine them with parmigian (what you want) and a pinch of salt until creamy and smooth
Turn the pot for pasta. 

Once the onion has browned and reduced its size, add the bacon. 

Once the pasta is al dente, pour the pasta into the pan with the bacon and add the egg mixture and Parmesan

As a second course, I have prepared the stuffed eggplant.
What you need:

10 eggplant,
10 small sweet tomatoes
 5 anchovies in oil
salt
oil
black pepper
You cut the eggplants in half, you remove the inside, and put the filling in a bowl and work it with anchovies cut small, olive oil, a pinch of black pepper, one clove of garlic cut small, cherry tomatoes and a drizzle of olive oil

Add the stuffed eggplants worked in the cut and arrange them on a baking sheet, add a little olive oil and put them in the oven. Bake them at 180 degrees for three quarters of an hour
